Experience Cuisine

I had the distinct pleasure of dining at the Herbfarm in Woodinville, WA last night. It is an exquisite 9-course evening, perfectly prepared and perfectly delightful. There's a reason it's won so many accolades.

One of the things that really struck me about the meal was how focused the Herbfarm folks are on the experience. Truly. At the beginning of the evening, there's a tour where you hear about the history of the Herbfarm, see where some of the food you'll eat was harvested earlier in the day, and learn about the origins of various unique furnishings and adornments in the space. Once everyone is seated, the Chef and Sommelier explain the selections for the night, how they will be prepared, and the stories behind the local varieties of ingredients and wines being served. Throughout the night, guests are welcome to visit the pot-bellied pig, watch as the chef and his team prepare various courses, and as as many questions as they like.

I think the Herbfarm may just have redeemed the buzzword "Eatertainment." Fast Company complained about the misuse of the term, dubbing it the Worst Industry Buzzword:

"Eatertainment": the category to which some analysts assign theme restaurants like Hard Rock Cafe and Bubba Gump Shrimp Co. -- places where "food functions as a prop" (and sometimes tastes like one).

The folks who wrote the book on the Experience Economy have started giving out awards (called EXPY) at their annual event thinkAbout. I haven't seen the lists of all the businesses that have made the top 10 over the last few years, but I wonder when a single, small dining experience will be featured. Eatertainment galore.

Woodinville, Wa has come a long way. Several other great culinary experiences await you, here in the "Wine Country" of the Pacific NW. Also try my friends catering place, "Lowell Hunt Cafe" just down the street from the Herbfarm for gastronomical delight (at a much lower price point!)
